Yuan has named Cheung Chin Choi executive Chinese chef at the Millennium Hilton Bangkok restaurant.Trained in classical Chinese culinary techniques and specializing in ethnic cuisine, Cheung has garnered more than 30 years' experience in Shanghai, Phnom Penh, Chengdu, Bali, Perth, Saudi Arabia, the United Arab Emirates and, most recently, Hong Kong. His specialty is Cantonese cuisine, but insists he can also bring in a contemporary twist and healthy options as well.
Cantonese food, from the south of China, emphasizes seafood and fresh, seasonal produce. Heat and speed are musts for Cantonese cooking, to "keep the food fresh and naturally delicious," says Yuan's new executive chef.
